Game recipes from the Big Green Egg

Did you know that game is possibly the most sustainable meat available? The animals live in the wild, they forage for their own food and they mature at their own pace. Game is simply a collective name for animals that live in their natural environment Their pure and natural way of life comes through in the flavour. In the past, game was hunted for food and cooked over an open fire. Nowadays, it is seen as a luxury product, but in order to keep a healthy population it is necessary to hunt the various game species.
Partly due to the current infrastructure, there simply is a surplus of game. If the population were allowed to get too large, it would pose a threat to agriculture, forestry and public safety, and furthermore, the animals would not be able to find enough food. The game population is closely monitored by means of game counts, in order to determine which game species should or should not be hunted. Preserving nature in this way is of great importance and because of it we can still enjoy eating game.
As with all kinds of meat, each type of game has its own characteristic structure, colour and flavour. So there is no general way to prepare game. The preparation also depends on which part of the animal you are using in your recipe. Meat is nothing more than muscle. If a muscle has not had to work hard during the animal’s life, then this part is tender and juicy. For large cuts, for example, you can start by grilling this meat on the Cast Iron Grid and then continue cooking at low temperature, in combination with the convEGGtor, until the desired core temperature is reached.
Or you could do it the other way round by first cooking the meat slowly and then giving it a nice pattern using the grill. If you cut the meat into smaller pieces, or if you are using small, tender cuts, you can give the meat a short, hot blast on the grill.
Muscles that have done a lot of work are tough and chewy, but are incredibly rich in flavour. These cuts are less suited for short cooking at high temperatures. But when you use them in the Cast Iron Dutch Oven, the Green Dutch Oven or in the Cast Iron Skillet to make a tasty stew in the Big Green Egg, the meat becomes deliciously tender and soft, and the flavour of the meat remains just as delicious!
