As the perfect pizza starts with a good base, (making) a good pizza dough is of crucial importance. Planning to bake pizzas or pizza calzones on your Big Green Egg? Use this pizza dough recipe and you will come out triumphant!
For the dough
- 250 g flour (preferably type ‘00’)
- 150 ml lukewarm water
- 20 g fresh or 7 g dry yeast
- 1 tsp sugar
- 1 tbsp olive oil
- Place the flour with a pinch of salt in a bowl and mix. Put the water in a measuring jug and dissolve the yeast and sugar in it. Mix the solution into the flour. Knead for 1 minute and add the olive oil. Now knead the dough thoroughly for at least 5 minutes. This is easiest in a food processor. Cover the bowl with a clean damp kitchen towel and let the dough rise for 60 minutes.
- Divide the dough into two equal portions for the large pizza bases or in four equal portions for four mini-pizzas. Sprinkle some flour on the Pizza Dough Rolling Mat and roll out the dough on the mat with a rolling-pin. You can also shape the dough directly on the Aluminum Pizza Peel. In this case, sprinkle the peel with flour, place the dough on the Pizza Peel, and flatten the dough by hand from the middle to the sides. Turn the Pizza Peel a quarter turn each time with the free hand.
