Rub for beef
Feel like cooking a brisket low and slow on your kamado, or grilling up a nice beef steak on your Big Green Egg? Create your own rub : use this beef rub recipe to tailor the flavour of beef rub to make it your own personal recipe. If you like the taste of paprika, add a little more smoked paprika powder. If fennel’s your favourite, add some extra fennel seeds to make the rub to your taste!
- 5 g juniper berries
- 12 g black peppercorns
- 15 g mustard seeds
- 6 g fennel seeds
- 5 g ground cumin
- 15 g smoked paprika powder (sweet)
- 15 g madras curry powder
- 10 g granulated garlic
- 5 g ground nutmeg
- 5 g ground ginger
- 12 cloves
- 200 g fine salt
- 125 g dark brown sugar
- Grind or crush the juniper berries, black peppercorns, mustard seeds, fennel seeds and the cumin using a spice grinder, coffee grinder or mortar and pestle.
- Combine all the ingredients for the rub and store in a sealed container until you need to use it.
