Chicken Satay Skewers
Nothing is tastier than these juicy, spicy Chicken Satay Skewers grilled on the Big Green Egg!
1 pound chicken breast, cut into pieces
2 TBSP oil
2 TBSP sweet chilli sauce
2 TBSP ketjap manis (Indonesian sweet soya sauce)
1 TBSP soya sauce
1 clove garlic, minced
1/2 red chilli pepper, seeds removed and minced
1 TBSP ketchup
1/2 TBSP brown sugar
1 tsp Worcestershire sauce
1 tsp sesame oil
Thumb-size piece of ginger, grated
1 tsp curry powder
1 tsp onion powder
1 tsp paprika
1 TBSP fresh lemon juice
salt and pepper
Mix the garlic, chilli pepper and ginger in bowl, and add the ketjap manis and the oil. Stir in the chilli sauce, soya sauce, sesame oil, ketchup and Worcestershire sauce until mixed thoroughly.
Add the spices along with a little salt and pepper and the lemon juice. Sweeten with the brown sugar. Mix the chicken pieces with the marinade. Cover, and let marinate in the refrigerator for at least 4 hours.
Soak the wooden skewers in water for at least 30 minutes. Thread the chicken pieces on the skewers and grill them on medium for about 8 minutes, until done. Turn often.
Serve with fried rice, satay (spicy peanut) sauce and cucumber salad for a delicious meal.
